Fiber-Filled Cinnamon Buckwheat Waffles


Yields 4 servings

Ingredients

Buttermilk

2 cupes plant-based milk (unsweetened)

1 tbsp organic apple cider vinegar

Waffles

2 cups organic buckwheat flour (or consider using oat flour, what flour or any combination you prefer)

1 tbsp baking powder

1 tsp ground cinnamon (optional)

1/2 tsp salt (optional)

1/4 cup organic unsweetened applesauce

3 tbsp maly syrup

2 tsp vanilla extract


Directions

  1. Make the buttermilk.

  2. In large mixing bowl, add the buckwheat flour, baking flour, baking powder, cinnamon and salt. Stir to combine.

  3. Add the applesauce, maple syrup, and vanilla extract to the buttermilk mixture and whisk to combine

  4. Transfer the we ingredients to the dry ingredients and stir to combine

  5. Lightly spary your waffle maker

  6. Preheat your waffle iron until it's ready

  7. Pour 1/2 - 3/4 cup waffle mix to the waffle maker when it's ready, close the lid and cook until waffle make indicates it's ready.

  8. Remove the waffle. Eat immediately or put on baking sheet and place in 20 degree oven to keep it warm.

Toppings


Add fruit like blueberries, strawberries, kiwi, or bananas.

Top with nuts or seeds.

Make a waffle "sandwich" and spread your favorite nut or seed butter and homemade jam in between.

Add a drizzle of maple syrup to the top.
